My favorite Antipasto Salad with Sun-dried Tomato Dressing.  It’s bold + vinegary + perfectly salty + kinda chunky, but in a fun, marinated vegetable kind of way.  It’s like antipasto salad meets charcuterie board dip.  Sounds weird, but really want I mean is it pairs perfectly with a cracker.  Chunky olives, tomatoes, cubed salami, and mozzarella balls - it gives classic cheeseboard vibes + it’s as good piled on top of a cracker as it is on a fork.

Pretzel Crusted Cauliflower + Honey Mustard Salad

This week I learned that you can in fact coat cauliflower in pretzel, bake it to create perfectly crunchy + salty cauliflower nuggets, and the end result is a great veggie based little something that’s the perfect chicken substitute. And it’s a discovery I’m thrilled to have made. I make cauliflower based meals weekly - it’s for sure the most cooked veggie at our house.
