Butternut Squash Bean-“otto” with Burrata + Sage (and focaccia!)

Regardless, I was looking for something that would deliver on Fall flavor + something that would make for great leftover to have hand. This Butternut Squash + Bean-“otto” with Burrata + Sage packed all the Fall flavors I was looking for and undoubtedly my biggest kitchen success this week. Cannellini beans prepared risotto style, served in a rich + velvety butternut squash sauce.

Roasted Summer Squash Pizza

The assignment this week: pizza (driven by own personal craving for a nice, cheesy slice of pizza). This Roasted Summer Squash Pizza hit the spot, and was a perfectly light + refreshing Summer twist on pizza. Sounds kind of crazy and maybe impossible to have a light and refreshing pizza, but this delivered.

Roasted Broccoli with Parmesan + Pine Nuts

My current obsession (specifically as it relates to side dishes) - this Roasted Broccoli with Parmesan + Pine Nuts. It’s my go to veggie side when I’m making a meal that needs something green, which translates to anytime I’m making pasta I’m also making the parmesan roasted side. It is the designated pasta veg right now.

Epic Veggie Sandwiches

Our love language over the Summer was DIY veggie sandwiches. It was all about loading up a cutting board with a ton of veggies - whatever was seasonal & fresh - and building the dinner sandwich of your dreams. There was always 2 crucial components: a really good sauce + a really good cheese. It was everything needed to have Epic Veggie Sandwiches at home, and this past week, despite it being soup season, I was craving one of these loaded sandwiches.

Cider Braised Cabbage with Cheddar Polenta

we had one cozy dinner at-home and I circled back to a dinner that I’ve really enjoyed in the past - Cider Braised Cabbage with Cheddar Polenta. The whole time I was making this, my little joke to myself was “cooking cabbage like a good little Irish girl.” I feel like cabbage, particularly a braised cabbage, is one of those things that’s so St. Paddy’s Day, and this is a perfect Winter cabbage dinner to have anytime.

Cauliflower + Mushroom Ragu over Cheesy Polenta

On the menu for a night in (for just us 2) - Cauliflower + Mushroom Ragu over Cheesy Polenta. Chosen because I thought it would pair well with a bottle of red wine (something about cracking open a bottle that seems pretty nice during the holidays), and though we swapped wine for holiday cocktails, it was a nice dinner to share with just us two.

Cranberry + Butternut Squash Wellington

the plan for a holiday datenight lived on with Winter-75s, Christmas carols playing in the background, and a really yummy Cranberry + Butternut Squash Wellington. It was a meal that felt worthy of dusting off the serving platters and serving up family style on our Winter-y dining table to give it a nice holiday vibe. Honestly this dinner is just so good.

Jammy Tomato Pasta Sauce

This Jammy Tomato Pasta Sauce has been my go to for (literally) the past month. Why? Because if you have a pint of tomatoes +30 minutes, it’s literal heaven. It’s so easy to whip up + such a good use for all the yummy tomatoes popping off at the grocery store right now. The ones I cannot resist buying. It involves sautéing the tomatoes slowly so they breakdown + become almost jammy, and it’s the jammyness that makes this sauce so special.

Creamy Caulifflower + Sage "Risotto"

Highlight from the week: Creamy Cauliflower + Sage “Risotto.” Cauliflower rice made in a risotto style - tenderized with white wine + stock, and then some parmesan melted in. It gives the best pasta vibes. Amped up with spinach + sage, and finished with my favorite impossible meatballs. There my guilty pleasure when it comes to a meatless veggie option, and they round out the whole risotto + meatballs vibe I was going for.

Cauliflower Rice Dan Dan Noodles

These Cauliflower Rice Dan Dan Noodles are my ultimate comfort food.  Whether it’s cold + yucky out, or in this case when I’m home alone and just want to cozy up in the air conditioning.  It’s a dinner that’s part rice bowl, part moderately soupy ramen, and it’s just delightful.

Jackfruit Carnitas with Tomatillo-Avocado Salsa

Regardless, this Friday night meant tacos.  Specifically my most favorite Jackfruit Carnitas with Tomatillo-Avocado Salsa.  These tacos are the perfect medley of flavorful taco “meat,” a zingy sauce, and fresh herbs + veggies to top it off.  At its core, it’s such a good carnitas mimic!  The perfect blend of fresh orange + spices, and the texture is perfect for tacos.  But the sauce - it’s like a lighter style guac and it’s real good

Broccoli Pesto Orecchiette

So we’re back home + entering back into real life with a fine Monday meal - Broccoli Pesto Orecchiette. A light and veggie heavy pesto serve alongside the most delicious cauliflower + mushroom side. It was the perfect kick-start to the work week. The sauce is thick + cheesy + coats the noodles so perfectly, and the hefty dose of basil + garlic balances out the broccoli and adds in a classic pesto twist.

Kale + White Bean Stuffed Manicotti

Stuffed pasta was a first for us, and sounded perfect for a cozy Saturday night in. We landed on a Kale + White Bean Stuffed Manicotti with a simple red sauce, and we haven’t been able to stop talking about it. My husband’s words when we were scarfing down leftovers yesterday were “we gotta save this one” - so here we are.

Roasted Tomato + Mushroom Polenta with a Hot Honey Sauce

Comforting, and it feels classy. During the week when I’m making a lot of salads + casserole style meals, a plated + composed dinner is just a nice mix up, and a bowl of loaded polenta has become a go to. This hearty bowl of Roasted Tomato + Mushroom Polenta with a Hot Honey Sauce did not disappoint. Creamy polenta + roasted veggies + the most yummy, sticky sauce that’s the perfect combination of spicy and sweet.

So savory + filled with the most delightful spiced flavors of curry + harissa.
