Queue the first soup of the season - a Sour Cream + Onion Potato Soup topped the best thing ever - potato chips. I like to call think of this one as “picked to be on our weekly menu solely because it comes with a side of potato chips” soup. And not just any chips - it has to be nothing other than Sour Cream + Onion Ruffles.
Read MoreThis year, we eased back into our at-home routine with a to-go brownie from Purebread we smuggled across the border and the most delicious Creamy Cauliflower + Cous Cous Soup. The most delicious non-chicken soup that gives major chicken noodle soup vibes. It’s savory, brothy, creamy, and the broth has this little bit of thickness that is just heaven.
Read MoreThis Creamy Tomato + White Bean Soup is like my Winter soup of the season. I stumbled on this one towards the end of last year when I wanted something super healthy to eat and I have been hooked. It’s easy to prepare, a one pot wonder, so tasty, and I’ve been wanting to re-make it for weeks.
Read MoreA BIG standout - this Creamy Pumpkin Soup with Gruyere Grilled Cheese. Last night was our first Saturday night at-home in weeks, and we made the most of it. We decided a simple soup and getting our house holiday ready was the Saturday night we wanted, and I’m so glad I have this sweet dinner together to remember our first time decorating our new home for Christmas.
Read MoreChili of choice - Chipotle Maple Chili. Maple + chipotle sounded like it would make a great BBQ sauce, and I thought it would translate to a fun take on chili, and it did. I was inspired by one recipe I stumbled on that called for a bit of maple mixed in to a big pot of chili, and I went with it. The maple flavor was subtle, but totally identifiable, and so tasty with all the peppers and other spicy bits. So balanced + a fun flavor twist.
Read MoreThis week - we’re trying a vegetarian twist on her Poule au Pot Pie - swapping a whole roasted chicken for more veggies and crafting our own Cauliflower Pot Pie with a Puff Pastry Topper + a Lemon Tarragon Aioli. Holy crap - it was good! It’s part veggie stew + part casserole, but gives that same warm and comforting vibe as a warm bowl of your favorite soup. The perfect blend of hearty veggies cooked in a flavorful, herby broth, and topped with buttery puff pastry.
Read MoreButternut squash + brie - two of my most favorite things and they’re perfect in together in soup. Classic Butternut Squash Soup with Brie + Crispy Prosciutto - it’s velvety + creamy + silky smooth. The x-factor is the spices - they add such a nice zing to the soup and genuine spice flavor that gives it the most perfect amount of kick.
Read MoreI went all in on Veggie Dumplings in Rich + Savory Broth, and holy crap am I glad that I did. Totally worth going to 3 grocery stores to track down those wonton wrappers. There are 2 major components - dumplings + broth. The dumpling filling was so fun to make, and so fun to assemble the dumplings with Jordan (it was the perfect little dose of kitchen fun after the work day). The broth was so rich + lush + savory, and perfect to sop up with the dumplings - like so freaking good!
Read MoreFirst time ever trying to transform our squash into soup, & it went great! Our Summer Squash Chowder was a total winner - cheesy + creamy + all around comforting. I’d dare say I’m not even a big squash person (like you couldn’t pay me to eat one raw with a dipper), but I do love this veggie grilled or sautéed with quite a bit of garlic.
