First time ever trying to transform our squash into soup, & it went great! Our Summer Squash Chowder was a total winner - cheesy + creamy + all around comforting. I’d dare say I’m not even a big squash person (like you couldn’t pay me to eat one raw with a dipper), but I do love this veggie grilled or sautéed with quite a bit of garlic.

Cheesy Cauliflower Chili

This weeks challenge - vegetarian chili. I usually really don’t like vegetarian chili. Sometimes I feel like our vegetarian chilis just don’t turn out savory enough, and a good savory bite is what I’m looking for when it comes to chili. Savory + hearty + so much flavor while being the perfect base for some solid chili toppings loaded on top (all the avocado + cheese + cilantro I can handle!). Cauliflower + Buttermilk Dumpling Soup

It was a pretty traditional situation at my house - shredded chicken + peas + carrots + celery + dumplings. But man did I love it! I’ve tried a few times to make my own, & it never really made the cut of “we should have this again.” That all changed a couple weeks ago with the Cauliflower + Buttermilk Dumpling Soup. I made mine meatlesss, used a buttermilk dumpling recipe as Inspo, and added in hella herb to create my twist on a Linda classic. Not totally a copy of the childhood meal I remember, but very close and a total banger.
