Huevos Rancheros Egg Sandwiches
The perfect quick + easy Sunday (post-run) brunch or a quick little lunch to whip up on a whim. Regardless, these Huevos Rancheros Egg Sandwiches feel like a brunch treat and are super easy to make. A crispy hash-brown layer + over easy egg make up the bulk of the sandwich, and the spreads are freshly mashed avocado + a smear of seasoned refried beans. Fresh and filled with all the breakfast essentials - it’s the perfect twist on an easy egg sandwich. And at our house (where refried beans are always in-stock), it’s a great go to meal. Just add your favorite Mexican hot sauce + your set.
For the sandwiches (2 sandwiches)
1 tbsp EVOO
1 garlic clove + 1 jalapeño, minced
1 can of refried beans
1/4 c. salsa
2 tbsp butter
Frozen hashbrowns
2 eggs
Seasoning salt
1 avocado, cut in half + sliced
Everything bagel seasoning
2 English muffins
hot sauce
Place the EVOO, garlic + jalapeño in a medium saucepan over medium heat, cooking for about 5-6 minutes. Add in the beans + salsa, stirring to combine. Season with a pinch of salt + pepper, and add in another 1-2 tbsp salsa if you want a thinner consistency for the beans. Bring to a simmer, cover, and reduce the heat to low. Let the beans continue to cook.
Preheat the oven to 350.
In another skillet, add the butter and heat over medium heat. When the butter has melted, add in the hashbrowns - enough to form two patties. Let the hashbrowns cook for 3-4 minutes, stir in the seasoning salt, then separate into 2 smaller “patties” that are as close to the size of the english muffin as possible. Cook on one side for 5-6 minutes (until it’s nice + crispy), then flip to toast the other side. When you do, scoot the hashbrowns to one side of the pan + crack the eggs into the other. Sprinkle with seasoning salt + decrease the temp to medium low.
While the eggs cook, place the English muffins in the oven for 5-7 minutes - just enough to become toasted.
Mash 1/2 an avocado on one side + place a thin smear of the beans on the other. Layer the hashbrown patty + then the egg on top of the beans, sprinkle a bit of the everything seasoning on the avocado, and a few drops of hot sauce on the eggs. Smash it all together, cut it in half, an enjoy.
