Watermelon Cosmos
Watching Sex and the City + sipping on the Watermelon Cosmos + overall just feeling like a fucking queen. I’m usually light on the alcohol during the week, but this week I was extra good going sans alcohol Mon through Thurs, and I’ve honestly been SAVING myself for a good Summer cocktail. These watermelon drinks are THE Summer cocktail. Fresh watermelon + juicy lime + vodka. Simple as hell + borderline too good.

If ever again I have watermelon that is on the cusp of going bad + is virtually too much for me to drink - I’m blending them up + juicing them. And then these are the cocktails I’m making. I have the sassy gay man who visited the bar this passed week and so casually referred to watermelon juice as “waju” to thank for this situation.
I quickly gave the watermelon we have on hand a quick blend (a watermelon I totally forgot I purchased + left sitting in my car for like 2 days….oops!), let it strain, and then collected the juice and transferred it right into my mason jar. The best part is it did not take long for the watermelon to strain, and that was a big come up as juicing something by letting it strain out can be a really time consuming task. Not the case and so so simple to get some fresh + sweet watermelon juice.
Fresh Watermelon + lime
Fresh watermelon juice is your base, and the juice of a couple limes + some simple syrup is all you have left. Truly simple af to create your cosmo base. Last + most crucial step - add vodka.
Rocks glass + big ice
Getting the cocktail served up + ready to roll is simple as well. Serve in a rocks glass with one giant ice cube, and your set. Place your ice in the glass, add in a shot of vodka, fill to the top with your watermelon base, and ta-da. A total cinch! The little circle of lime on top is just what makes it cute + fun.
Worth holding out on the weekday drinks + saving myself for a good quality weekend cocktail. And running 12 miles on Saturday morning before I whipped these bad boys up just made it feel real deserved + guilt free.
For the cocktail
5-6 c. cubed watermelon
2 limes
simple syrup
vodka
Start by placing all the watermelon in a blender, and blend until totally liquified. Pour out the contents into a strainer that’s set over a large bowl. Let drain for 10 minutes, then transfer the juice to a large mason jar or other carafe. You should have at least 3 cups of straight watermelon juice. Juice 2 limes + add to the watermelon juice. Add in 3-4 tbsp of simple syrup. Let sit in the fridge.
When ready to serve, add a shot of vodka to a glass with ice, and top with the watermelon juice. You’re ready to enjoy.
