Watermelon Margaritas

I am the queen of stocking up on fresh fruits at the grocery with full intention live my life as an extra healthy human & eat them - have them for dessert to curb a sweet tooth & snack on them for an easy bite. I’m like lured in by how pretty they look and I think to myself “I want to eat be the person that eats fruit on reg.” But it’s inevitable - I always end up wanting something salty for a quick snack, and I really just want a cookie for an after treat. So said fruit doesn’t get consumed as intended upon purchase, & I resort to turning my fruit into cocktails. & this weeks turn it into a cocktail before it goes bad moment is dedicated to watermelon. & these Watermelon Margaritas were the best summer cocktail of 2019 thus far.

 
 

Simple. Only 4 ingredients. Watermelon-y. All you need to know about these tasty margs. & they are perfectly slush - like a slurpee. Watermelon is such a great frozen fruit to use for drinks because they hold so much liquid that when you go to blend it up the drinks are smoother & the ideal frozen drink consistency. Essentially you won’t end up with a super thick smoothie that you can’t even suck through a straw. This stuff is light but still full of that sweet, watermelon flavor that’s amped up with just a splash of lime & agave.

You can even make the drinks sans-booze by replacing the tequila with lemonade, and it’s the perfect afternoon pick me up during the work week. & the perfect way to get through a whole watermelon by the end of the week. Just all around perfecto!

For the margaritas

  • 4 c. cubed watermelon

  • 2 limes, juiced

  • 3 oz. tequila

  • 1 tbsp agave or maple syrup

Put the watermelon in a glass bowl and place in the freezer for at least 2 hours.

Add the frozen watermelon, lime juice, & booze to the blender. Blend until the watermelon is smooth & not chunky (about 2 minutes). Add in the agave, and blend for 30 more seconds. Pour into two 16 ounce glasses and drinks are served.
